Cooking with Banana
3 more ways with banana:

No-fat banana 'ice cream'

Peel three bananas and place in the freezer for a few hours until almost frozen. Chop into chunks, throw into the food processor with the juice of half a lime, and whiz. Keep whizzing as the fruit is chopped, then becomes a frozen puree. The colour will turn creamy white, the texture an unbelievably creamy 'ice cream'. Serve immediately. Experiment by adding a handful of frozen berries.

Banana yoghurt

Mash a banana and fold through half a cup of natural yoghurt. Serve with a drizzle of honey and a sprinkling of chopped walnuts, or with fresh passionfruit.

Chocolate bananas

Bake bananas until the skin turns black and the flesh completely softens. Meanwhile, chop some good quality dark chocolate and mix with a handful of toasted slivered almonds. When the bananas are cooked, split the skin, scatter the chocolate and nuts over, so the hot banana melts the chocolate. Serve with vanilla ice cream.
