Japanese Green Beans
Japanese Green Beans

Ingredients

  • 200 g green beans
  • 50 g black sesame seeds, toasted (alternatively use white sesame seeds or a combination of black and white seeds)
  • 1 tbsp caster sugar
  • 2 tbsp mirin
  • 1 tbsp soy sauce

Method

1. Trim both ends of the green beans and cut in half.

2. Boil the beans in a saucepan of boiling salted water for about 2-3 minutes, or until just cooked and still slightly crunchy.

3. Drain the beans and transfer them to a bowl of ice cold water for one minute, or until cool. Drain again then pat dry with kitchen paper or a tea towel.

3. Place the sesame seeds in a pestle and mortar and lightly crush the seeds. Add the sugar, mirin, soy sauce and vinegar, and mix them well to make a smooth paste. (You can a little tahini paste for a more creamy sauce.)

4. Combine the beans and the sauce and toss until the beans are well coated. Serve.
