Here is a great recipe to preserve your beetroot harvest this season.
Maxine's Sliced Beetroot
The perfect addition to a healthy homemade hamburger!
Ingredients: - 2 cups of water
- 1/2 cup brown sugar
- 1 1/2 cup brown vinegar
- 8-10 cloves
- 1 small peeled onion
- 6 Beetroot (1 bunch)
Cooking instructions:
Wash beetroot, cut leaves off -leaving 1 inch of the stalk on and leave tail intact. - Combine ingredients in a saucepan and bring mixture to the boil.
- Simmer till Beetroot is cooked (softens).
- Take off heat and leave to cool in liquid.
- Remove beetroot, peel & slice and place into glass jars, covering with the liquid it was cooked in.
- Add 1 clove to each jar
