Maxine's Sliced Beetroot

Here is a great recipe to preserve your beetroot harvest this season.

Maxine's Sliced Beetroot 

The perfect addition to a healthy homemade hamburger!

Ingredients:

  • 2 cups of water
  • 1/2 cup brown sugar
  • 1 1/2 cup brown vinegar
  • 8-10 cloves
  • 1 small peeled onion
  • 6 Beetroot (1 bunch)
Cooking instructions:

Wash beetroot, cut leaves off -leaving 1 inch of the stalk on and leave tail intact.
  1. Combine ingredients in a saucepan and bring mixture to the boil.
  2. Simmer till Beetroot is cooked (softens).
  3. Take off heat and leave to cool in liquid.
  4. Remove beetroot, peel & slice and place into glass jars, covering with the liquid it was cooked in.
  5. Add 1 clove to each jar
