Cauliflower
CAULIFLOWER
Cauliflower also need to be planted in March-April so they have the time they need to develop their heads for a winter harvest. As the head grows, pull over 2 of the larger leaves and peg on top to protect the white flower from the sun. Cauliflower need a lot of room around them, so plant them 50cm apart. 

Cauliflower also come in a range on non-white cultivars that let's face it makes them more appetising - orange, purple and green! Purple varieties include 'Graffiti' and 'Purple Cape' - he purple colour is caused by the presence of the antioxidant group anthocyanin, which can also be found in red cabbage and red wine. Treat the same as white caulis, watching out for white butterfly and pegging the large leaved over to protect the developing heads. Seeds are available from Diggers Club.

Why purple? Well the colour is caused by a pigment called anthocyanin which is responsible for the colour of blueberries, grapes and red cabbage and has a number of health benefits, such as improved eyesight, blood flow and tumors, that are intriguing scientists from all over the world.
