3 more ways with homegrown lettuce
1. Butter lettuce with creamy dressing
Whisk together equal amounts of white wine vinegar, walnut oil, olive oil and natural yoghurt. Add a teaspoon of Dijon mustard and whisk again. Cut butter lettuce into quarters and arrange on a plate with pea sprouts and green onions. Drizzle over the dressing. Add some garlic croutons if you like.
2. Hot smoked salmon and avocado on frizzy lettuce
Pick frizzy lettuce or endive leaves or some other green with a hint of bitterness. Wash and tear into bite-size pieces, then toss with a dressing made with olive oil, lemon juice, honey and mustard to taste. Pile on to plates, then top with broken pieces of hot smoked ocean trout or salmon and chunks of avocado. Drizzle a bit more dressing over and finish with snipped chives.
3. Braised lettuce and peas
When there is a glut of greens in the garden, cook them up. First sauté a finely chopped onion or echalion, then add handfuls of sliced greens and a splash of chicken stock. When they start to wilt, add a few handfuls of frozen baby peas and mix well. Try to time it so that the liquid is just about boiled away when the peas are cooked. Add a splash of cream and season with salt and pepper. Serve with roast chicken.
