Fold the diced flesh of two mangoes and a handful of toasted slivered almonds through 2 litres of softened vanilla icecream. Re-freeze before serving.

Mix the diced flesh of a mango with a diced cucumber, finely chopped spring onion and a handful of chopped mint. Mix sweet chilli sauce and fresh lime
juice with caster sugar, and adjust to suit your taste. Mix into the mango, and serve on barbecued fish or chicken.
Great for an overripe mango. Blend the flesh of the mango with a third of a cup of natural yoghurt, the juice of two freshly squeezed oranges, a pinch
of cinnamon and dibble of honey. Taste and adjust sweetness then serve.
