Rocket

Rocket delivers a peppery bite, perfect for salads, pizzas and sandwiches. Sow seeds directly in a spot with full sun or part shade and well-drained soil. Water regularly and harvest young leaves often to encourage fresh growth and to delay flowering (bolting), which can make the leaves bitter.

Beetroot

Beetroot brings earthy sweetness to salads, roasts and juices, with leaves equally good sautéed. Sow seeds directly into loose, friable soil enriched with organic matter. You can harvest in 4-6 weeks for baby beets. Or for mature tennis ball-sized roots, you can harvest around 10-12 weeks.

Spring onions

Spring onions are mild, crisp and endlessly useful, sliced fresh into salads, eggs, stir-fries, soups and so much more. Sow seed directly into well-drained soil, lightly cover and keep moist. They germinate quickly and grow best in full sun. Harvest young for tender stems or leave longer for stronger flavour.

Radishes

Radishes grow quickly, with crisp, lightly peppery roots that brighten salads and garnishes. Sow seeds directly into loose, well-drained soil, keep them watered and watch them mature in just 4–6 weeks. Harvest promptly for tender roots and sow every few weeks for a healthy continuous crop.

Carrots

Carrots add crunch and sweetness to salads, roasting and endless uses in many meals. Sow seeds into deep, friable soil, enrich with compost. Keep surface consistently moist until germination, which can take 2–3 weeks. When seedlings are 5cm tall, thin them to give each plant room to grow straight roots.

Spinach

Spinach is rich and tender, great for wilting into pasta or omelettes or tossing fresh into salads. Sow in full sun or part shade with well-drained soil and harvest young leaves regularly to prevent bitterness. Perpetual varieties keep producing all season, giving a steady supply of tender leaves for your kitchen.
