Smoked salmon, oliveand bocconcini salad

Ingredients
• 2 cups baby cos or green leaf lettuce
• 200g smoked salmon slices, rolled
• 120g bocconcini, mini balls
• 1 cup cherry tomatoes, halved or larger tomatoes cut small
• ½ cup black olives
• ½ cup green olives (optional for extra colour)
To serve
• 1 tsp dried oregano, mixed Italian herbs, peppercorns
• Lemon wedges
Dressing
• 3 Tbsp extra virgin olive oil
• 1 Tbsp lemon juice
• 1 tsp Dijon mustard
• ½ tsp honey
• Salt and black pepper
Method

Arrange lettuce on a serving platter.

Add rolled smoked salmon pieces, bocconcini, cherry tomatoes and olives.

Whisk dressing ingredients together and drizzle over salad.

Sprinkle with herbs, season and serve with lemon wedges.
