Smoked Salmon, Bocconcini and Olive Salad



 

Smoked salmon, oliveand bocconcini salad

Serves: 4

 

Ingredients

• 2 cups baby cos or green leaf lettuce

• 200g smoked salmon slices, rolled

• 120g bocconcini, mini balls

• 1 cup cherry tomatoes, halved or larger tomatoes cut small

• ½ cup black olives

• ½ cup green olives (optional for extra colour)

 

To serve

• 1 tsp dried oregano, mixed Italian herbs, peppercorns

• Lemon wedges

 

Dressing

• 3 Tbsp extra virgin olive oil

• 1 Tbsp lemon juice

• 1 tsp Dijon mustard

• ½ tsp honey

• Salt and black pepper

 

Method

  1. Arrange lettuce on a serving platter.

  2. Add rolled smoked salmon pieces, bocconcini, cherry tomatoes and olives.

  3. Whisk dressing ingredients together and drizzle over salad.

  4. Sprinkle with herbs, season and serve with lemon wedges.
